Getting Creative with Bacon

Aren’t we always looking for new ways to cook bacon, one of our favorite food groups? I recently spotted someone cooking bacon like this and decided to try it myself! Here is how I made it and how I decided to turn it into a meal!

#1  Set oven to 425 degrees.  Line a cookie sheet with parchment paper. Weave bacon strips into a lattice pattern. I used 3 horizontal and 3 vertical and then trimmed it with kitchen scissors using a 5 inch round bowl as a guide.  Place a cookie rack on top of the bacon and put an oven proof bowl on top of the rack.  This way the bacon will stay flat.  Bake for 15 minutes, take it out and remove the bowl and return to oven for 5-8 more minutes depending on how crispy you like it.

This is such a fun way to serve bacon.  Put scrambled or poached eggs on top, use as a base for a salad or make 2 bacon discs and put a burger, lettuce and tomato  in-between them.  Definetly something different.

#2  I placed some brussells sprouts, olive oil, crushed red pepper and the trimmed  pieces of bacon and roasted that together for about 20 minutes at 425 degrees.
