If you want to pack your breakfast full of nutrients, use this recipe to make it delicious and healthy!
1) Add a layer of spinach to a non stick pan on medium high heat, use more spinach if needed to cover any gaps. Let the spinach wilt just a little, you don’t want to cook it.
2) Slowly and gently add a lightly beaten egg or two on top of the spinach and let cook to desired doneness.
3) Slide egg and spinach onto a plate. Add strips of already cooked bacon.
4) Roll everything up, top with a salsa, slices of avocado, caramelized onions or cheese.
